Coconut Granola


  • 2 cups old fashioned oats
  • 3/4 sweetened shredded coconut
  • 1/3 cup pumpkin seeds
  • 1/2 cup chopped almonds
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract

To Make:
Preheat oven to 300. Line a baking sheet with parchment paper.

Whisk together the syrup, oil, and extract and set aside. In a large bowl combine all of the dry ingredients, top with the liquid mix, and stir well.

Pour the mix out on to the baking sheet and spread evenly. Bake for about 30 minutes, stirring often. Let cool and store in an airtight container.
