- 2 cups diced watermelon
- 2 jalapeños, seeded and diced
- 1/2 cup fresh chopped cilantro
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
- 1 or 2 limes
In a large bowl stir together first 5 ingredients. Mix in juice of 1 lime and a healthy pinch of salt. Season to taste with additional lime and/or salt.
