Tomato Salsa


  • 8 plum tomatoes, seeded and roughly chopped
  • 1 small red onion, roughly chopped
  • 1 jalapeno, roughly chopped
  • 2 garlic cloves, crushed
  • 2 tablespoons fresh cilantro, finely chopped
  • Juice of 1 lime
  • Salt and pepper

To Make:

Combine tomatoes, onion, jalapeno, and garlic in a food processor or blender and pulse once or twice, just enough for the mixture to smooth out. Transfer to a bowl and add cilantro, lime juice, and a pinch of salt and pepper. Mix well and refrigerate for at least 1 hour before serving.
