Grilled Pineapple Salsa


  • 1/2 of a pineapple, peeled and cored, sliced into 1/4 inch rings
  • 1 mango, peeled and finely chopped
  • 1 small red bell pepper, seeded and finely chopped
  • 1/2 small red onion, finely chopped
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons fresh cilantro, finely chopped
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lime
  • Salt and pepper

To Make:

Grill pineapple about 2 minutes per side, just long enough to char the flesh, set aside to cool. Meanwhile, combine mango, bell pepper, onion, ginger, and cilantro in a bowl. Once the pineapple has cooled, finely chop it and add it to the bowl. Mix in the olive oil, lime juice, and a pinch of salt and pepper. Set aside at least 15 minutes before serving to let all the flavors combine.
