Ingredients:
- 3 pounds boneless chicken breasts/thighs
- 1 cup roasted cashews
- 1 cup fresh cilantro
- 4 garlic cloves
- 2 jalapenos, seeded
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- 1/4 cup grapeseed oil
- Salt and pepper
To Make:
Add cashews, cilantro, garlic, jalapenos, brown sugar, lime juice, and oil to a food processor and pulse until everything comes together in a smooth paste. Season to taste with salt and pepper. Cover chicken with about 3/4 of the mix and refrigerate for at least 4 hours, overnight if possible.
Let chicken return to room temperate and grill over medium-high heat until done. Drizzle with reserved marinade and serve.
