Ingredients:
- 2 large sweet potatoes, peeled and diced
- 2 apples (sweet and crisp varieties), peeled, cored, and diced
- 1/2 white onion, diced
- 4 garlic cloves, minced
- 1 celery rib, diced
- 1 chipotle pepper in adobo
- 1 quart vegetable broth
- 3 cups water
- 2 tablespoons olive oil
To Make:
In a large pot cook the onion and garlic in oil over low heat until soft, about 5 minutes. Add the apples and celery, cook for an additional 5 minutes; followed by the potatoes and another 5 minutes of cook time. Stir in the broth and water and bring to a boil.
Partially cover and reduce heat to a simmer. Cook for 30 minutes then stir in the chipotle. After an additional 10-15 minutes, until vegetables are tender, blend soup until smooth. Season with salt and pepper and serve.
