Roasted Zucchini Relish


  • 2 cups zucchini, diced
  • 1 small red onion, diced
  • 2 jalapenos, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • Salt and pepper

To Make:
Preheat oven to 400. Toss the zucchini, onion, and jalapenos with olive oil until well coated. Spread out on a large baking sheet and place in oven for about 20 minutes, until lightly browned.

Transfer to a bowl and add cilantro and lime juice. Refrigerate until well chilled. Season to taste with salt and pepper before serving.
