Potato Kugel


  • 8 medium white potatoes
  • 2 large white onions
  • 2 carrots
  • 6 eggs
  • 1/4 cup flour
  • 1/2 cup vegetable oil
  • 1 tbsp salt
  • 1 tsp ground black pepper

To Make:

Preheat oven to 400. Mix the eggs, flour, oil, salt and pepper in a large bowl and set aside. Meanwhile, coarsely grate the potatoes and onion in batches and squeeze out all excess water. Coarsely grate the carrots and add to the egg mixture, along with the potatoes and onion.

Spread mix into a greased 13×9 baking dish and bake, uncovered for about 60 minutes. The top should be a golden brown and a knife should come out clean.
