Parmesan Mashed Potatoes


  • 4 pounds potatoes, peeled and cubed
  • 1 cup milk
  • 1/2 stick butter
  • 1 cup Parmesan cheese, grated
  • 1 1/2 cups mozzarella cheese, grated
  • Salt and pepper

To Make:

Preheat oven to 400. Butter a 13×9 baking dish.

Boil the potatoes in salted water until tender. Drain and return to pot, then mash with the milk and butter. Stir in the mozzarella cheese and 3/4 of the Parmesan. Season to taste with salt and pepper. Transfer to baking dish and top with remaining Parmesan. Bake uncovered for 20 minutes.
