Ingredients:
- 1 cup fresh corn kernels
- 1/2 cup cornmeal
- 3/4 cup flour
- 1/2 teaspoon baking powder
- 1 egg
- 1 cup milk
- Salt and pepper
To Make:
Mix together the cornmeal, flour, and baking powder. Make a well in the center and add the egg and milk, then stir to combine with a little salt and pepper.
In a non stick pan, heat about 1 tablespoon of oil. Add in 1/4-cup portions of the mix and cook 3 minutes per side, until cooked through.
