Carrot Slaw


  • 2 pounds carrots, peeled and trimmed
  • 5 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1/4 cup fresh parsley, finely chopped
  • Zest of 1 lemon
  • Salt and pepper

To Make: 
Grate the carrots either in a food processor or with a box grater. Whisk together other ingredients and season to taste with salt and pepper. Combine in a large bowl and let sit for at least 15 minutes at room temperature before serving.
