- 2 large peaches, cut into 1 inch chunks
- 6 cups mixed salad greens
- 1/4 cup balsamic vinegar
- 1/3 cup extra virgin olive oil
- 1/2 teaspoon black pepper
- Pinch of cayenne pepper
- Salt to taste
In a medium bowl mix together the vinegar, oil, salt, black pepper, and cayenne pepper. Add the peaches and coat thoroughly. Set aside at room temperate for about 10 minutes.
Divide the greens equally among 4 small plates and then spoon the peach mixture on top and serve immediately. Makes 4.
