Quinoa Fruit and Nut Salad


  • 1 3/4 cup quinoa, rinsed
  • 2 cups water
  • 1/3 cup white wine
  • 1/2 shallot, finely chopped
  • Olive oil
  • Salt and pepper
  • 1/2 cup dried fruit of your choosing (apricots, cherries, etc), chopped
  • 1/2 cup roasted nuts of your choosing (peanuts, cashes, etc), chopped
  • 1/4 cup fresh mint, finely chopped
  • Juice of 1 lemon

To Make: 
In a medium pot saute shallot in olive oil until softened. Stir in water and wine and bring to a boil. Add in the quinoa, cover, and simmer for 15 minutes or until quinoa is cooked. Let cool.

Once cool, mix in lemon juice, a healthy splash of olive oil, dried fruit and nuts, and mint. Mix to combine.
