Mascarpone Toasted Almond Ice Cream

Ingredients:

  • 8 ounces mascarpone cheese
  • 1 cup whole milk
  • 3/4 cup superfine sugar
  • 1 cup toasted almonds (see recipe below)

To Make:

Prepare ice cream machine.

In a bowl mix together the mascarpone, milk, and sugar. When the mixture is smooth transfer to your ice cream machine. Right before your desired consistency is achieved, stop the machine and fold in the toasted almonds. Churn a few minutes longer then place the ice cream in a freezer for about 4 hours until ready to serve.

 

Toasted Almonds

Ingredients:

  • 8 ounces almonds, finely chopped
  • 2 tablespoons sugar
  • 2 tablespoons cinnamon

To Make:

Preheat oven to 350. Place almonds in a single layer on an ungreased baking sheet. Bake for 10-15 minutes, stirring often, until golden brown. Toss almonds with sugar and cinnamon. Shake off any excess sugar and cinnamon and store almonds in an air tight container.
