Cranberry Granita
Ingredients:
- 1 1/2 cups fresh cranberries, washed
- 2 cups water
- 3/4 cup sugar
- 1/2 teaspoon lime zest, freshly grated
To Make:
Heat cranberries, water, and sugar over medium- high heat and simmer for 5-10 minutes, until the cranberries begin to pop. Remove from heat and let cool slightly. Puree mix in a blender or food processor until smooth. Remove the solids by passing mix through a fine mesh strainer over a small baking pan. Add lime zest and stir to combine.
Place pan in the freezer and stir every 2 hours until mix has the consistency of shaved ice (approximately 6 hours). Serve immediately. Garnish with fresh cranberries and a twist of lime.
If making ahead, follow all directions but freeze solid. Take the pan out the freezer about 4 hours prior to serving and let the mix melt slightly. Break up the ice as best you can and repeat as above every 2 hours or so. Makes 6-8 servings.
