Baked Stuffed Apples


  • 4 large baking apples
  • 1/4 cup pecans, chopped
  • 1/4 cup dried cranberries
  • 4 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 tablespoon butter

To Make:

Preheat oven to 350.

Combine the pecans, dried cranberries, brown sugar, and cinnamon. Set aside.

Core each apple, being careful to not pierce through the bottom of each apple, and place in a baking dish. Combine the water, lemon juice, and vanilla. Add about 1 tablespoon of this mix to each apple. Then place the rest of the bottom of the baking dish.

Stuff each apple with a quarter of the pecan cranberry mix and top with a quarter of the butter. The spoon about a tablespoon of the liquid over each apple.

Bake uncovered for about 45 minutes, or until the apples are soft. Baste occasionally with the liquid. Serves 4.
