Tomato Margarita


  • 1 large beefsteak tomato
  • 1 cup good quality tequila
  • Agave nectar or simple syrup
  • Lime juice
  • Salt

To Make: 
Cut the tomato into large chunks and add to a blender with the tequila. Pulse a few times until the whole mix is pulpy. Strain through a very fine mesh sieve and let rest abour 15 minutes.

For each drink, rim a glass with lime juice and salt. To a cocktail shaker add 3 ounces of the tequila with half an ounce each of your sweetener and lime juice. Add ice and shake until well chilled. Strain and serve.
