Ingredients:
- 1 ripe avocado
- 2 eggs
- Salt and pepper
- Fresh herbs
To Make:
Preheat oven to 425. Slice the avocado in half and remove the pit. Scoop out some of the flesh to make room for the egg – you’ll need a cavity approximately twice as big – feel free to eat the scooped avocado. Crack one egg in to each half.
Bake for about 15 minutes, until the whites are set. Top with salt and pepper, and whatever fresh herbs you have on hand – parsley, chives, cilantro, etc.
