Organic Apple and Red Cabbage Cole Slaw


  • 2 large organic Granny Smith apples
  • 5 cups red cabbage, grated
  • 3 scallions, chopped
  • 3 tbsp lime juice
  • 2 tsp sugar
  • 1 tsp Dijon mustard
  • 2 tsp fresh ginger, grated
  • 6 tbsp extra virgin olive oil
  • Salt and pepper

To Make:

In a small bowl whisk together the lime juice, sugar, mustard, and ginger. Then slowly add in the olive oil while still whisking. Set aside.

Core the apples and then cut them into thin slices, then cut the slices into thin strips. Combine the apples, cabbage, and scallions in a large bowl and mix with the dressing. Cover and refrigerate until ready to serve.
