Asparagus Casserole


  • 3 10 ounce packages frozen asparagus
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 3/4 cup shredded Parmesan cheese
  • 1 1/2 cups milk
  • 2/3 cup breadcrumbs
  • 1 tablespoon butter, melted
  • 1/4 teaspoon paprika
  • Salt and pepper

To Make:

Preheat oven to 350.

Thaw and drain the asparagus and arrange in a lightly greased baking dish. In a medium saucepan melt the 3 tablespoons of butter, then add the flour and stir continuously for about 1 minute. Add in the milk and continue stirring until thick. Remove from the heat and stir in 1/2 cup of the Parmesan and season with salt and pepper.

Cover asparagus with mix.

In a bowl combine the breadcrumbs with the melted butter and paprika. Spread evenly on top of asparagus. Bake for 30 minutes and serve.
