Scallops with Gin Butter Sauce


  • 1 pound sea scallops
  • 2 tablespoons oil
  • 2 tablespoons lime juice
  • 2 tablespoons gin
  • 3 tablespoons butter
  • Salt and pepper

To Make: 
Season scallops with salt and pepper. Heat non stick pan over medium high heat, sear scallops in oil about 1-2 minutes per side. Remove from pan and keep warm.

Add lime juice and gin to the pan. Bring to a boil and reduce for a few minutes. Reduce heat to medium, add butter one tablespoon at a time. When sauce is thickened a bit, add scallops back to pan to coat, serve.
