Roasted Garlic Guacamole


  • 6 large cloves of garlic, skin on
  • 6 medium avocados
  • 2 tablespoons fresh lime juice
  • 1/2 cup fresh cilantro, finely chopped
  • Salt

To Make:

Place the garlic in a cold pan and heat over medium heat. After about 10-15 minutes, turning the cloves every few minutes, the skins should be browned and blister in spots, and the cloves themselves will soften. Remove the garlic and when cooled peel off the skins.

Place the flesh of the avocados, garlic, lime juice and cilantro in a large bowl and mash together until even and combined. Season to taste with salt.
