- 2 cups fresh cilantro
- 4 cloves garlic, coarsely chopped
- 1/2 cup toasted walnuts or pine nuts
- 1/2 cup olive oil
- 1/4 cup Parmesan cheese, grated
- Salt and pepper
In a blender or food processor, pulse the cilantro, garlic, and nuts a few times. Then, with the blade running, slowly add in the oil until well combined. Transfer to a bowl and stir in the cheese. Season to taste with salt and pepper. Serve over your favorite pasta, or use as a dip for just about anything.
