Artichoke Guacamole


  • 1 can/jar artichoke hearts, drained
  • 2 ripe avocados
  • 1/2 onion, diced
  • 1/2 tomato, diced
  • 2 jalapenos, diced
  • 1 lemon
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper

To Make:
Scoop the flesh from the avocado and add it, the artichoke hearts, onion, tomato, jalapenos, and the juice of 1 lemon to a food processor. Pulse a few times until the mix is consistent. Transfer to a bowl, stir in the cilantro, and season with salt and pepper.
