Coconut Curry Chicken


  • 2 cups shredded cooked chicken
  • 1 yellow onion, finely sliced
  • 1 red pepper, finely sliced
  • 1 cup snow peas
  • 1 cup fresh basil, coarsely chopped
  • 14 ounces unsweetened coconut milk
  • 2 tablespoons red curry paste
  • Vegetable oil
  • Salt and pepper

To Make:
Saute the onion and pepper in vegetable oil until softened. Stir in the coconut milk, snow peas, and curry paste, then bring to a boil. Add in the chicken and simmer for a few minutes, until the sauce has thickened. Stir in the basil, serve over rice or noodles.
