Ingredients:
- 2 boneless chicken breast halves
- 1/4 cup blue cheese, crumbled
- 1 teaspoon fresh parsley, finely chopped
- 1/3 cup apple cider
- 1/3 cup chicken broth
- Olive oil
- Salt, pepper, and paprika
To Make:
Preheat oven to 350. Cut a 3-inch slit in to each chicken breast half. Combine the blue cheese, chopped apple, and parsley in a bowl. Then stuff each chicken breast half with half of the mix. “Seal” with toothpicks or a small skewer.
Place chicken in a small baking dish (ie, just big enough to fit the chicken). Brush both sides of the chicken with olive oil, then season with salt, pepper, and a dash of paprika. Mix together the cider and broth, pour over chicken.
Bake for 30-40 minutes until tender and juices are clear. Serve with your favorite rice or pasta.
