Ingredients:
- 2 tablespoons fresh basil, chopped
- 3 tablespoons extra virgin olive oil
- 2 teaspoons dijon mustard
- 1/4 cup fresh lemon juice
- 1 garlic clove, finely minced
- 1/2 teaspoon lemon zest
- 1/4 teaspoon salt
- 4 cups cooked chicken, chopped
- 2 cups fresh spinach
- 1/2 cup sun dried tomatoes, chopped
To Make:
Whisk together the basil, olive oil, mustard, garlic, lemon juice and zest, sugar and salt. In another bowl combine the chicken, spinach and tomatoes. Toss with the dressing and serve.
