Mint Iced Coffee


  • 1 cup water
  • 1 cup sugar
  • 1 cup fresh mint leaves
  • 1 vanilla bean pod
  • Iced coffee
  • Milk or cream

To Make: 
Scrape the insides of the vanilla bean pod into a saucepan with the water, sugar, and mint leaves. Bring to a boil over medium heat, whisking constantly until the sugar dissolves. Let cool to room temperature then refrigerate.

Add a couple of tablespoons to your favorite iced coffee with some additional milk or cream and enjoy.
