Zucchini Bread


  • 2 cups zucchini, grated
  • 3 eggs
  • 3 cups flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg, ground
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1 cup olive oil
  • 1 cup raisins or dried cranberries (optional)

To Make:
Preheat oven to 350. Liberally grease and flour two 8×4 loaf pans. Beat the eggs, then whisk in the sugar, oil, zucchini, and vanilla.

In a separate bowl combine the flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Finally, stir in the raisins/cranberries. Add to egg mix and fold to combine.

Divide the batter in to the two loaf pans and bake 50-60 minutes, until a toothpick comes out clean.
