Yogurt Blueberry Muffins


  • 2 cups flour
  • 3/4 cup sugar
  • 2 eggs
  • 4 tablespoons melted butter
  • 1 1/4 cups plain yogurt
  • 1 cup fresh blueberries
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Zest of one lemon
  • Pinch of salt

To Make:

Preheat oven to 375. Prepare muffin tins.

In a bowl, sift together the flour, baking soda, baking powder, and salt. In a separate bowl mix together the sugar, eggs, butter, yogurt, and cinnamon.

Combine the wet and dry ingredients, careful not to over-mix. Fold in the blueberries. Fill each muffin cup about 2/3 of the way.

Bake for about 15 minutes until golden brown and set on the inside. Serve warm.
