Sweet Potato Cookies


  • 1 cup sweet potato, shredded (uncooked)
  • 3/4 cup butter, softened
  • 1 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 3 tablespoons orange juice
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 1/4 cup quick cooking oats
  • 1 cup chopped pecans
  • 1/2 cup butterscotch chips

To Make: 
Preheat oven to 350. In a bowl, cream the butter and sugars until fluffy. Mix in the egg and orange juice. In a separate bowl mix together all of the dry ingredients. Combine with the wet ingredients and then mix in the nuts and butterscotch chips.

On parchment-lined baking sheets, drop teaspoon sized balls of dough, about 2 inches apart. Bake about 15 minutes until golden and lightly firm. Let cool on wire racks.
