Pate a Choux


  • 1 cup water
  • 1/2 cup butter
  • 1 cup flour
  • 4 eggs
  • Pinch of salt

To Make:

Preheat oven to 425.

In a pot bring the water and butter to a simmer. Add the flour, stirring in one direction, until a dough forms. Continue cooking for 1 to 2 minutes as the rest of the water cooks off.

Transfer to a mixer and mix in the eggs one at a time, and the salt, until incorporated. Spoon the dough to a piping bag and pipe onto a parchment-lined baking sheet keeping the puffs about 2 inches apart.

Bake at 425 for 10 minutes then lower the heat to 350 and continue to bake for 20 to 30 minutes, until the puffs are golden and cooked through.
