- 2 cups flour
- 1 cup shredded coconut, sweetened
- 2 teaspoons baking powder
- 1/2 cup brown sugar
- 2 eggs
- 3/4 cup vegetable oil
- 1 cup plain yogurt
- 1 teaspoon vanilla extract
- 1 mango, peeled and diced
Preheat oven to 350. Prepare muffin pan
In a large bowl combine the flour, coconut, and baking powder. In another bowl stir together the eggs, oil, yogurt, and vanilla extract and mix well. Add the wet ingredients to the dry ingredients and stir until just combined. Carefully fold in the diced mango.
Divide mix equally among 12, lined, muffin cups. Bake for 15-20 minutes, until a toothpick comes out clean.
