Cinnamon Swirl Muffins


  • 2 teaspoons ground cinnamon
  • 1/4 cup brown sugar
  • 2/3 cup buttermilk
  • 1 egg
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • Olive oil
  • Salt and pepper

To Make: 
Preheat oven to 350. Line muffin tin with liners (recipe makes 6).

Stir together the brown sugar and cinnamon and set aside.

In a large bowl, whisk the flour, salt, baking soda, and baking powder. In a separate bowl, mix together the buttermilk, egg, sugar, and melted butter.

Fold the wet mix into the dry ingredients. Fill each muffin cup about halfway, then top with about 1 tablespoon of the brown sugar/cinnamon mix and swirl with a toothpick. Then top with more of the batter until filled about 3/4 of the way. Repeat.

Bake until cooked through, about 20 minutes.
