Cinnamon Spice Cookies


  • 2 cups flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup shortening
  • 2/3 cup brown sugar
  • 1 egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar

To Make: 
Preheat oven to 350. In a large bowl, whisk together flour and spices and set aside.

In a mixer, beat the shortening until light and fluffy on high speed. Reduce to low and mix in the egg, molasses, and vanilla. Fold in the flour mix, being careful not to overmix.

Roll dough into tablespoon sized balls, then coat with the sugar. Press onto a parchment lined baking sheet, spacing them around 2 inched apart. Repeat with remainder of cookie dough.

Bake until edges are firm, 10-12 minutes, rotating halfway through.
