Cherry Lemon Tea Bread

  • 1/2 cup unsweetened dried cherries, coarsely chopped
  • 1 1/2 cups flour
  • 1/2 cup cornmeal
  • 6 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons olive oil
  • 1 egg
  • Zest of 1 lemon

To Make: 
Preheat oven to 350. Prepare 8×4 loaf pan.

Whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt. Set aside. In a separate bowl, mix together the buttermilk, egg, oil, and lemon zest until well blended. Stir in to flour mix until combined. Transfer to pan.

Bake 45-50 minutes until set. Allow to cool before slicing.
