Carrot Muffins

Ingredients:

  • 2 cups shredded carrots
  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 3/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cups plain yogurt
  • 4 tablespoons unsalted butter, melted
  • 1 egg

To Make: 
Preheat oven to 375.

In a large bowl combine flour, sugar, spices, baking powder and baking soda, and salt. In a separate bowl, mix together the yogurt, butter, and egg. Add wet ingredients to dry and stir until just combined, then fold in carrots.

Distribute batter into prepared muffin cups and bake for about 20 minutes, or until a toothpick comes out clean.
