Ingredients:
- 1 sheet puff pastry dough, thawed
- 2/3 cup blue cheese, crumbled
- 1 egg, lightly beaten
- 1/2 small yellow onion, thinly sliced
- 1 pear, thinly sliced
- 1 tablespoon fresh thyme, finely chopped
- Olive oil
To Make:
Preheat oven to 425. Place pastry dough on a baking sheet and dock with holes across the dough, leaving the outside inch whole. Bake for about 10 minutes, just until the dough starts to puff up.
While the dough is in the oven, saute onion in olive oil until softened. Let pasty dough cool for a few minutes. Combine the blue cheese and egg, and then spread out over the dough. Top with the sauteed onions, then the sliced pear.
Bake for about 15 minutes until egg is set and dough is golden brown. Top with fresh thyme.
