Apple Clafouti


To Make Batter:

  • 1/2 cup flour
  • 1/3 cup sugar, plus 2 tablespoons
  • 1/4 teaspoon cinnamon
  • a pinch of salt
  • 3 eggs, plus 1 egg yolk
  • 1 cup whole milk

To Prepare Apples:

  • 1 vanilla bean, split
  • 2 tablespoons unsalted butter
  • a pinch of salt
  • 1 1/2 cups peeled and diced apple (about 1 large apple; we recommend Granny Smith, or another tart variety)
  • 2 tablespoons sugar
  • 1 teaspoon brandy

To Make:

Preheat oven to 400 degrees.

Sift together the flour, sugar, cinnamon, and salt. In a separate bowl, whisk together egg, egg yolk, and milk until smooth. Gradually incorporate the egg mixture into the flour mixture and whisk until well blended. Cover and refrigerate while you prepare the apples.

Heat a 10-inch cast iron pan, or other oven-safe vessel, over medium-high heat. Scrape the seeds from the vanilla bean and add the seeds, pod, and butter to the pan and cook until the butter begins to brown. Add salt. Add the apples and cook until soft – about 2 minutes – stirring often. Reduce heat to low and remove the vanilla bean pod. Sprinkle the apples with the sugar and continue to cook until the sugar melts and the apples are covered in a light syrup. Remove the pan from the heat and add the brandy. Ignite the brandy, either by your gas stove or with a lighter, then place the pan back on the heat and stir once the flame has died down.

Spread the apples evenly over the bottom of the pan, then spread the batter mix evenly over the top of the apples. Bake until the center is set and the edges are golden brown, about 15 minutes. Sprinkle with confectioner’s sugar and serve hot with ice cream. Makes 6 servings.
