Ingredients:
- 5 medium apples
- 1/2 cup chopped walnuts
- 1 1/2 cups sugar, divided in half
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 3 eggs
- 1/3 cup vegetable oil
- 3/4 cup matzo cake meal
To Make:
Preheat oven to 350. Grease an 8″ baking dish, set aside. Mix together the walnuts, half of the sugar, the spices, and set aside.
Beat the eggs in a mixer on medium. Slowly add the sugar a few tablespoons at a tie and mix until thick and foamy. While running, slowly add in the oil. Fold in the matzo meal and set aside.
Peel, core, halve, and slice the apples into 1/4″ pieces. Spread half of the batter in to the baking dish, topped by half of the walnut mixture and half of the apples. Then top with the remaining batter, apples, and walnuts.
Bake for about 60-75 minutes, until sides begin to pull away from the dish. Let cool completely.
